Hot Luck Kimchi Hotsauce
Created by wildly talented chef Gaspar Tse who cut his teeth in some of Australia's best restaurants over the last 10 years, during COVID he saw an opportunity to create some amazing condiments.
This sauce is a blend of locally grown chillies (scud, birdseye, habenero) that have been lacto-fermented with a range of ingredients that typically go into making kimchi, including Korean pears, daikon, shallots and ginger. The result is a hot sauce that has heat and complexity at the same time.
This is a drizzling sauce that is more flavour than spice, made to go on pretty much anything! We also think it's a great way to add a bit of spice and acidity to your dishes.
